Fit Friday: MSF Raw Mocha Almond Squares

Happy Friday everyone! I hope you are having a great week and are headed into the weekend feeling accomplished or inspired. I have been plugging away at Pilates training and enjoying walking to classes in this summer-like weather we’ve been having.

DSC_2542.jpgIt’s been pretty warm so I haven’t been wanting to put my oven on to bake anything, but that doesn’t mean my chocolate cravings go away! I experimented with some things I had on hand and ended up with squares that were the perfect amount of chocolatey goodness and super simple to make, so I felt the need to share with you!

These remind me of a chocolate brownie with a ganache-like consistency and a hint of coffee which gives that caffeine kick I am seriously addicted to. They are rich and luscious enough to feel sinful, but the ingredients are clean and raw and nothing to feel bad about. Win, win!

DSC_2548.jpgYou must try and make these to enjoy pre/post workout or to have when you need a little pick-me-up that feels decadent and something to look forward to in your day. So with out further ado, here is the super simple recipe.divider

MSF Raw Mocha-Almond Squares


1 c raw unsalted almonds

1 c pitted dates

1 tsp organic cinnamon

½ c raw unsalted almond butter

1/3 c organic cacao powder

1 TBL organic fresh ground coffee

pinch Himalayan pink salt

¼ c melted coconut oil



In food processor, pulse almonds until coarsely chopped. Add dates and cinnamon and process until dough forms (dough should spring back when touched). If the dough is not coming together add 1 tsp of water at a time. Prepare square baking pan with parchment and push dough into pan in even layer, place in freezer. Next in food processor blend the rest of the ingredients except coconut oil until well blended (a few pulses will do it). Add coconut oil and pulse a few more times until smooth consistency (can add more melted coconut oil if not smooth). Take out pan from freezer and pour chocolate layer on top of base layer, put back in freezer for 1 hour. Take out and cut into slices and enjoy! Store in airtight container in freezer or refrigerator up to one week.DSC_2545.jpgdivider

So there you have it, a fit treat you can feel good about and easy enough to whip up again after the first batch disappears 😉
