Helllooooo Friday, it’s so great to see you. Was there a full moon this week? Not sure if it’s just me or if you felt it too but there were some interesting vibes this week. Anyway, I’m happy to see the weekend on the horizon where I’ll be celebrating my little sis turning 25! And all the festiveness long weekends bring.
As an ode to this summer-like weather we’ve been having, I wanted to include a light and refreshing cocktail to enjoy this weekend that is not only festive but also MSF approved.
When I think of summer gatherings (especially outdoors in the sun in) my mind goes to margaritas. The only thing worse than a warm watered-down cocktail in the heat is one filled with nasty ingredients that you can’t pronounce and a week’s worth of sugar.
This watermelon margarita will not only be too tasty to leave sitting for any length of time, it has ZERO added sugar and only natural ingredients (tequila is from nature, right?).
As you may know by now, I’m a major fan of efficiency and combining ingredients that will give you more bang for your buck in the nutrition department.
Trending in the cocktail world is superfood cocktails, where mixologists are incorporating green juice or elevated ingredients like activated charcoal to balance out the seemingly less desirable effects of consuming alcohol. To piggyback off this idea I thought of incorporating some deliberate ingredients in my cocktail that would not only deliver flavor but serve as a nutritional boost as well.
I chose watermelon because it is about 90% water (hello hydration) so perfect for a cocktail you are sipping poolside or on a hot, sunny day and is also packed with nutrition including vitamins A, B6 & C, and potassium. It also includes antioxidants, amino acids and lycopene. Lycopene works as an antioxidant to fight free radicals but is most notable for being an anti-inflammatory (essential when sporting those bathing suits & cut-offs).

MSF Watermelon Margarita
3 c fresh watermelon (pureed or juiced)
¾ c blanco tequila (I used Casamigos)
½ c fresh lime juice (wedges saved for garnish)
splash of sparkling water (I used San Pellegrino)
optional jalapeños (can use to make margarita spicier)
optional salt for rim
Yields two drinks
In drink shaker, combine all but sparkling water with ice and shake vigorously. Pour over ice in desired vessel and top with sparkling water.
Note: I am not a fan of sweet drinks so I didn’t include sweetener but if sweet is you jam you can incorporate agave or honey. I also do not like blended margaritas but if you want a smoothie consistency use pulp or puree of watermelon instead of juice. Lastly, I do not like to add extra salt to my diet but some can’t have a margarita without it, if that’s you then rim away with some sea salt or Himalayan pink salt!
