Fit Friday: MSF Salted Caramel Bites

Hello weekend! Even in the dead of summer vacation there is still something about Fridays, it’s honestly the best feeling to get to the end of a work week or weekdays and have the promise of a full weekend on the horizon.

I have to say I’ve enjoyed my summer schedule which mostly consisted of Pilates and walking Finley, but there is something to be said about a work schedule and being able to depend on that consistency.

I found myself busier than ever this week with appointments, meeting friends, and working on a multitude of projects. Whenever I get busy or I know I have a packed schedule, I try to keep things on hand that are easy to grab or put together for meals and snacks.

Since I was doing a lot of hours at the Pilates studio and teaching classes doesn’t allow a lot of time for sit down meals, I was looking for things that were bite size and satiating.

You all know I love a good protein ball, I’ve included a few recipes on here before but the last one I made this week was just too simple and delicious to not share.

Enter MSF Salted Caramel Bites. They are as every bit decadent and satisfying as they sound. Every bite is caramel-y goodness and the perfect chewy texture. If you have 5 minutes, you have time to throw these together and pack them for a day at the beach, a day full of running errands, or a treat in the middle of a workday.

The best part is they are gluten-free, soy-free, dairy-free, and have zero added sugar (only natural sugar from dates). So plug in your food processor and get to snacking.

MSF Salted Caramel Bites

Ingredients

1 c raw cashews

¾ c pitted dates

pinch of Himalayan pink salt

½ tsp pure vanilla extract (I used bourbon vanilla for mine)

Directions

In food processor, combine all ingredients until one ball of dough forms. Can add pink of water at a time until desired consistency is achieved. Roll into balls and place in refrigerator for 20-30 minutes. Enjoy! Store in airtight container for up to one week.

I am off to prep the dough for tonight’s grilled pizza Friday! We used fresh local figs, goat cheese and pistachios on last week’s and I must say it came out AMAZING. What are your plans for the weekend? I hope you get to go out and enjoy the weather and breathe in that summer air 🙂
